Senfeier

Ingredients:

  • 6 eggs
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons mustard (Dijon or German mustard for an authentic taste)
  • 2 cups milk
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Boil the Eggs:
    • Place the eggs in a saucepan and cover them with cold water.
    • Bring the water to a boil over medium-high heat.
    • Once boiling, reduce the heat to a simmer and cook the eggs for about 9-12 minutes.
    • Transfer the boiled eggs to a bowl of ice water to cool. Once cooled, peel the eggs and set them aside.
  2. Prepare the Mustard Sauce:
    • In a medium saucepan, melt the butter over medium heat.
    • Stir in the flour to create a roux, cooking for about 1-2 minutes until it’s lightly golden.
    • Gradually whisk in the milk to avoid lumps, and continue to whisk until the mixture thickens.
    • Add the mustard, salt, and pepper. Adjust the seasoning according to your taste.
    • Simmer the sauce for a few more minutes until it reaches a creamy consistency.
  3. Add the Eggs:
    • Cut the peeled boiled eggs into halves or quarters and gently place them into the mustard sauce.
    • Allow the eggs to simmer in the sauce for a few minutes to absorb the flavors.
  4. Serve:
    • Once the eggs are heated through, transfer them to serving plates.
    • Spoon the mustard sauce over the eggs, ensuring each serving gets a generous amount of the flavorful sauce.
    • Garnish with chopped fresh parsley.
  5. Enjoy:
    • Serve Senfeier hot, accompanied by your favorite side dishes like boiled potatoes or crusty bread.

Senfeier makes for a delicious and comforting meal with a unique mustard twist. Guten Appetit!
