Ingredients:
- 1.5 kg beef stew meat, cut into bite-sized chunks
- 2 large onions, finely chopped
- 3 cloves of garlic, minced
- 2 red bell peppers, diced
- 2 tablespoons tomato paste
- 2 tablespoons sweet paprika
- 1 teaspoon caraway seeds
- 1 teaspoon marjoram
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 500 ml beef broth
- 250 ml red wine
- 2 tablespoons all-purpose flour
- 2 tablespoons water
- Chopped fresh parsley, for garnish
- Cooked noodles or mashed potatoes, for serving
Instructions:
- Prepare the Beef: Pat the beef pieces dry with paper towels. Season them with salt and pepper.
- Sear the Beef: Heat vegetable oil in a large, heavy pot over medium-high heat. Brown the beef in batches until well-seared on all sides. Remove the beef and set aside.
- Saute Onions and Garlic: In the same pot, add chopped onions and minced garlic. Sauté until the onions are translucent.
- Add Tomato Paste and Paprika: Stir in the tomato paste and sweet paprika. Cook for 2-3 minutes, allowing the flavors to meld.
- Combine Spices: Add caraway seeds, marjoram, bay leaf, and diced red bell peppers. Stir well to combine.
- Deglaze with Red Wine: Pour in the red wine, scraping the bottom of the pot to release any browned bits. Allow it to simmer for a few minutes.
- Reintroduce the Beef: Return the seared beef to the pot, along with any accumulated juices. Mix well.
- Add Broth and Simmer: Pour in the beef broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours or until the beef is tender.
- Create a Thickening Agent: In a small bowl, mix the flour with water to create a smooth paste. Stir this paste into the goulash to thicken the sauce. Simmer for an additional 15-20 minutes.
- Adjust Seasoning: Taste and adjust the seasoning with salt and pepper as needed.
- Serve: Remove the bay leaf. Serve the goulash over cooked noodles or mashed potatoes. Garnish with chopped fresh parsley.
