Pfirsich-Maracuja Torte

For the Cake:

  • 4 large eggs
  • 1 cup (200g) granulated sugar
  • 1 cup (120ml) vegetable oil
  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk

For the Filling:

  • 2 cups fresh peaches, peeled and diced
  • 1/2 cup passion fruit pulp (about 5-6 passion fruits)
  • 1/4 cup peach or apricot jam

For the Frosting:

  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

  • Fresh peach slices
  • Fresh passion fruit seeds

  1. Preheat the Oven: Preheat your oven to 350°F (180°C). Grease and flour two 9-inch (23cm) round cake pans.
  2. Prepare the Cake Batter: In a large bowl, beat the eggs and sugar together until light and fluffy. Add the vegetable oil and vanilla extract, mixing well. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  3. Bake the Cake: Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  4. Prepare the Filling: In a bowl, mix together the diced peaches, passion fruit pulp, and peach or apricot jam. Set aside.
  5. Make the Frosting: In a chilled bowl, whip the heavy cream until it begins to thicken. Add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  6. Assemble the Cake: Place one cake layer on a serving plate. Spread half of the fruit filling evenly over the top. Place the second cake layer on top and spread the remaining fruit filling.
  7. Frost the Cake: Cover the entire cake with the whipped cream frosting, smoothing it out with a spatula.
  8. Decorate: Garnish the top of the cake with fresh peach slices and passion fruit seeds for a beautiful finish.
  9. Chill and Serve: Refrigerate the Pfirsich-Maracuja Torte for at least 2 hours before serving to allow the flavors to meld. Slice and enjoy!

This Pfirsich-Maracuja Torte is a delightful combination of peaches and passion fruit, perfect for any special occasion or a sweet treat. Guten Appetit!
