Ingredients:

  • 500g Rindergulasch (beef stew meat)
  • 2 Zwiebeln (onions), finely chopped
  • 2 Knoblauchzehen (garlic cloves), minced
  • 2 Paprikaschoten (bell peppers), diced
  • 3 Kartoffeln (potatoes), peeled and diced
  • 2 Möhren (carrots), peeled and sliced
  • 2 EL Öl (tablespoons oil)
  • 2 EL Tomatenmark (tablespoons tomato paste)
  • 1 EL Paprikapulver edelsüß (tablespoon sweet paprika powder)
  • 1 TL Kümmel (teaspoon caraway seeds)
  • 1 Lorbeerblatt (bay leaf)
  • 1 Liter Rinderbrühe (beef broth)
  • 1 Dose gehackte Tomaten (can of diced tomatoes)
  • Salz und Pfeffer (salt and pepper, to taste)
  • 1 Bund Petersilie (bunch of parsley), finely chopped, for garnish

Instructions:

  1. In a large pot, heat the oil over medium heat. Add the finely chopped onions and minced garlic, and sauté until they become translucent.
  2. Add the beef stew meat to the pot and brown on all sides. This will enhance the flavor of the Goulash soup.
  3. Stir in the tomato paste and sweet paprika powder. Cook for a couple of minutes to develop the flavors.
  4. Add the diced bell peppers, sliced carrots, and peeled, diced potatoes to the pot. Mix well with the meat and spices.
  5. Pour in the beef broth and add the can of diced tomatoes. Stir in the caraway seeds and add the bay leaf for additional aroma.
  6. Season the soup with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours until the meat is tender and the flavors meld together.
  7. Once the soup is ready, discard the bay leaf and adjust the seasoning if necessary.
  8. Serve the Goulash soup hot, garnished with finely chopped parsley.
