Ingredients:
For the Cake:
- 200g all-purpose flour
- 150g granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- A pinch of salt
- 2 large eggs
- 200g sour cream
- 100g unsalted butter, melted
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1 can (approx. 300g) mandarin oranges, drained
For the Topping:
- 250g sour cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 180°C (350°F). Grease a round cake pan and line the bottom with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs. Add the sour cream, melted butter, vanilla extract, and lemon zest. Mix until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
- Gently fold in the drained mandarin oranges.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the topping. In a bowl, combine the sour cream, powdered sugar, and vanilla extract. Mix until smooth.
- Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once the cake is completely cool, spread the sour cream topping evenly over the surface.
- Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld.
