Ingredients:

  • 1 large green cabbage
  • 500g ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 200g smoked bacon, diced
  • 2 cups cooked rice
  • 2 tablespoons tomato paste
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • 2 cups beef broth
  • 2 tablespoons vegetable oil
  • Butter for greasing

Instructions:

  1. Prepare the Cabbage:
    • Preheat the oven to 180°C (350°F).
    • Remove the tough outer leaves of the cabbage and core it.
    • Blanch the whole cabbage in boiling water for about 5 minutes. This will make it easier to separate the leaves.
  2. Make the Filling:
    • In a pan, heat the vegetable oil and sauté the chopped onion and garlic until translucent.
    • Add the ground beef and smoked bacon, cooking until browned.
    • Stir in the tomato paste, caraway seeds, salt, and pepper. Cook for an additional 5 minutes.
    • Remove the mixture from heat and stir in the cooked rice.
  3. Assemble the Schichtkohl:
    • Grease a large ovenproof dish with butter.
    • Carefully peel off the cabbage leaves and place a layer at the bottom of the dish.
    • Add a portion of the meat and rice mixture on top of the cabbage leaves.
    • Repeat the layers until all ingredients are used, finishing with a layer of cabbage leaves on top.
  4. Bake:
    • Pour the beef broth over the layered cabbage.
    • Cover the dish with a lid or aluminum foil.
    • Bake in the preheated oven for about 1.5 to 2 hours, or until the cabbage is tender.
  5. Serve:
    • Allow the Schichtkohl to cool slightly before serving.
    • Cut into portions and serve with a dollop of sour cream, if desired.
