Ohhhhhhh einfach bombastisch! – Schweinekrustenbraten, Schmilzt auf der Zunge!

Ingredients:

  • 1.5 kg pork roast with skin (pork shoulder or belly)
  • 1 tablespoon caraway seeds
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon sweet paprika
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup (240 ml) beef or vegetable broth
  • 1 cup (240 ml) dry white wine
  • 2 tablespoons flour (for the gravy)

Instructions:

  1. Prepare the Pork:
    • Preheat the oven to 220°C (425°F).
    • Ensure the pork skin is dry. Pat it down with paper towels.
    • Score the skin with a sharp knife, making cuts about 1 cm apart. Be careful not to cut into the meat.
  2. Season the Pork:
    • Rub the caraway seeds, salt, black pepper, and sweet paprika all over the pork, including the skin.
  3. Sear the Pork:
    • Heat vegetable oil in a large oven-safe pan over medium-high heat.
    • Sear the pork on all sides until it’s golden brown.
  4. Saute Onion and Garlic:
    • Remove the pork from the pan temporarily.
    • In the same pan, add sliced onions and minced garlic. Saute until softened.
  5. Prepare the Roasting Pan:
    • Place the seared pork in a roasting pan, skin side up.
    • Pour the sautéed onion and garlic mixture around the pork.
  6. Add Liquid:
    • Pour the beef or vegetable broth and white wine into the pan.
  7. Roast the Pork:
    • Place the roasting pan in the preheated oven.
    • Roast at 220°C (425°F) for the first 20 minutes to ensure the crackling forms.
  8. Reduce Temperature:
    • After 20 minutes, reduce the oven temperature to 180°C (350°F).
    • Continue roasting for about 1.5 to 2 hours, basting the pork with the pan juices every 30 minutes.
  9. Check Doneness:
    • Check the internal temperature of the pork. It should reach at least 71°C (160°F) for medium doneness.
  10. Make Gravy:
    • Remove the pork from the pan and let it rest.
    • In a small bowl, mix flour with a bit of water to make a smooth paste.
    • Whisk the flour paste into the pan juices to make a delicious gravy. Adjust seasoning if necessary.
  11. Slice and Serve:
    • Slice the pork and serve it with the crispy crackling on top.
    • Drizzle some of the prepared gravy over the slices.
