Ingredients:
For the Rouladen:
- 4 beef slices (sirloin or flank), thinly sliced
- 4 slices of bacon
- 4 tablespoons Dijon mustard
- 1 large onion, finely chopped
- 4 medium-sized pickles, sliced lengthwise
- Salt and pepper to taste
- 4 tablespoons vegetable oil
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
For the Rotkohl (Red Cabbage):
- 1 small head of red cabbage, finely shredded
- 2 apples, peeled, cored, and diced
- 1 onion, finely chopped
- 2 tablespoons butter
- 2 tablespoons red wine vinegar
- 2 tablespoons sugar
- Salt and pepper to taste
For the Kartoffeln (Potatoes):
- 6-8 medium-sized potatoes, peeled and quartered
- Salt for boiling
- 2 tablespoons butter
- Chopped fresh parsley for garnish
Instructions:
Rouladen:
- Lay out the beef slices and pat them dry. Season each slice with salt and pepper.
- Spread a tablespoon of Dijon mustard over each slice.
- Place a slice of bacon on each beef slice, followed by chopped onions and a pickle.
- Roll up the beef slices, securing them with toothpicks.
- Heat vegetable oil in a large skillet over medium-high heat. Brown the beef rolls on all sides.
- In a bowl, mix beef broth, red wine (if using), tomato paste, and flour. Pour the mixture into the skillet.
- Cover and simmer for about 1.5 to 2 hours or until the beef is tender.
Rotkohl:
- In a large pot, melt butter over medium heat. Add chopped onions and cook until softened.
- Add shredded red cabbage and diced apples to the pot. Stir well.
- Pour in red wine vinegar and sprinkle sugar over the cabbage. Season with salt and pepper.
- Cover and simmer for 45-60 minutes, stirring occasionally, until the cabbage is tender.
Kartoffeln:
- Boil the quartered potatoes in salted water until they are fork-tender.
- Drain the potatoes and return them to the pot. Add butter and toss until the butter is melted and coats the potatoes.
- Garnish the potatoes with chopped fresh parsley.
